OUR FISH & SHELLFISH

Most of our fresh wild fish is caught in British waters, mainly Cornwall, Devon and Scotland. We buy farmed fish and shellfish only from ethical, BAP*-certified farms in the UK and abroad. All our smoked fish comes from the UK, and is mostly smoked locally, in the Cotswolds.

We buy wild fish daily, direct from small day-boats and quayside fish-market auctions in Brixham and Newlyn, which deal with local fishermen who use the most sustainable methods. We are MSC-accredited and regularly consult and act upon the sustainability ratings in the MCS (Marine Conservation Society) ‘Good Fish Guide’. If a fish is rated 5, we will not sell it until stocks recover. 

Our farmed fish and shellfish are sourced only from ethical, fully accredited, BAP*-certified farms. All certified bodies must pass tests on social accountability (including modern slavery and prevention of child labour) and employee health and safety, as well as the quality of goods produced, animal welfare, environmental and waste management, food safety management, and traceability.

Yes. We have full traceability and know exactly where and how our fish and shellfish have been caught or harvested.

The fish is first checked on the market before it is loaded into the van, and then once it arrives at New Wave, our experienced prep team checks, sorts and grades the fish before it is filleted and delivered to you.

The market price of wild fish fluctuates from season to season and day to day. This is due to a combination of supply and demand factors, and is beyond our control. For example, if catches have been large, the price will fall. Conversely, if certain species are scarce, the price will rise. Market dynamics also play a part: if demand is great, for example at the weekend, the price will also be higher. The fluctuations are unavoidable, and are due to several factors, including the weather conditions, fishing seasons and regulations on fishing.

The prices of farmed fish and shellfish are much more stable, particularly if from the UK. In the case of imported seafood, currency fluctuations or changes in tariffs or shipping prices may affect the cost.

Yes, there is. At certain times of the year, wild fish will be in its prime, with flesh yield and quality being at their best. Conversely, at certain times of year fish will be of poorer quality or unavailable. Farmed fish is generally the same year-round.

ORDERING

If you order before 11pm Monday to Friday, we can deliver your order the next working day (Tuesday–Saturday).

It is always best to order from us during working hours (Monday–Friday, 8am–4pm) for next-day delivery (Tuesday–Saturday). You are more likely to secure your whole order, our account managers can provide expert advice and guidance, and we can confirm availability at the time of ordering. You can phone us, or if you prefer, we can phone you at a fixed time that suits you.

For your convenience, you can also order during and outside working hours, by emailWhatsApp or using our New Wave app. If you order before 10.30pm, we can deliver your order the following working day (Tuesday–Saturday).

Please note: In the evening, fresh seafood is sold on a first-come, first-served basis. The earlier you order, the more likely you are to get your complete order. Also, some products (including some fresh produce) have longer lead times.

First, you need to register with New Wave to access the app. Then simply download it via the App Store or Google Play, as for any other app.

It is always best to give us as much notice as possible for special events that are coming up. It gives us more time to source large quantities of what you will need and to line up the fish preparation team to match your exact requirements.

Yes. It is £50. 

On the rare occasions that something goes wrong with the order, please mention it to the driver, who will contact the office immediately, or contact your account manager as soon as possible. We will always try to put it right. If the product is packaged and has a label (for example, a tub of scallops or a bag of mussels), please provide a photo of the label so we can match it to the batch.

Our wild fish is, of course, subject to availability. If there has been bad weather, or if the fishermen have been unable to catch sufficient numbers of a particular species due to several factors, it may in some cases not be possible to deliver what you require. During working hours, our account managers will contact you and suggest a good substitute. If you place your order outside working hours (after 4pm or at weekends), we will replace the product you have ordered with a good fresh-fish substitute and will inform you first thing the following morning. There are rarely availability issues with our farmed fish, smoked fish, frozen seafood and deli items.

DELIVERY

To ensure we deliver you the finest, freshest seafood in the fastest time possible, we deliver everything ourselves, in our own temperature-controlled vans. We never use couriers or subcontract to other companies to deliver our fish.

We currently go just beyond Hereford and Bristol in the west, Winchester in the south, central London in the east and Coventry in the north. However, there is some flexibility and the routes can change depending on demand.

No. We offer a free delivery to all our customers, provided they are on our delivery routes (see map) and have spent a minimum of £50. 

We deliver 5 days a week (Tuesday–Saturday) to most of our delivery areas and twice a week to certain areas on the edges of our delivery areas, e.g. beyond Winchester in the south and Leominster in the north-west (see the map). We do not deliver Mondays.

We deliver seafood in reusable plastic boxes, which can be decanted at point of delivery, for us to clean, disinfect and return next time, or you can put in your fridge and hand over next time we deliver. This benefits you as well as the environment, as we will clean the boxes for you, saving you time cleaning or crushing boxes and getting rid of waste, and frees up valuable storage space in your kitchen.

If you request us to leave the delivery outside or at the back door, we use insulated polystyrene boxes and ice, to ensure the order remains chilled and fresh.

Yes, we can. Just ask us when you place your order.

PREPARATION

Yes, we can. We have an excellent team of fish-preparation experts who can fillet, scale, skin, gut, clean, trim and pin bone your fish on request. When ordering, always say how you would like the fish prepared.

Yes, it is. We know how important it is for the busy chef to receive a well-prepared, attractively presented end-product and do not charge extra for this.

Yes, we can. We have a state-of-the-art laser-guided portion cutter, which can cut chunky fillets of salmon, cod, trout, pollack, hake and stone bass to a consistent size, ideal for banqueting or when catering for large numbers, e.g. for schools or colleges. All fillets can be sold per portion, to make costings more transparent.

We choose our fish sizes carefully. For example, we can offer a whole portion-sized flat fish (skinned) or portion-sized fillets of sea bass and bream. Fish bones are supplied to chefs on request. All other waste is sent to processing plants, where it is repurposed in the production of fishmeal, fertilisers and fish oil production, as well as other applications in the food, pharmaceutical and cosmetic industries.

BECOMING A CUSTOMER

It is a very easy process. You can either call us Monday to Friday between 8am and 4pm, and we will talk you through the steps. Alternatively, complete a New Customer Enquiry Form online, or download it and email it to us. We will contact you to let you know that your application is being processed and to discuss the terms of your account. Once your account is processed, you are ready to place an order.

We can provide a price list on request, but as fish prices fluctuate daily, it is always best to speak to your account manager, as they can inform you of what’s been landed fresh on the market and what’s best on the day. Alternatively, you can check on the New Wave app.

We can phone you and let you know, or we can send them out by WhatsApp or email – whatever you prefer. Please let us know if this is something you would like us to do for you.

Yes. We believe it is vital to offer a personal, bespoke service and to offer consistency. Every New Wave customer is allocated an account manager, who will discuss your individual requirements with you and advise on portion costs, what’s in season and special offers. You and your account manager can discuss your preferred way of communicating – whether by phone, email or WhatsApp. They can either contact you at a particular time that suits you, or you can contact them if you prefer. It’s totally up to you. Just let us know.

They are usually 30 days from receipt of invoice, although they do vary in some cases. It is best to discuss this with your account manager.
